Cheesy Black Bean and Cauliflower Vegetable Bake

A very easy bake that can use up any old vegetables you have laying around

Makes 8 servings

Ingredients

1 lb cauliflower, chopped
1 can black beans
4 tbsp Dijon mustard, smooth not grainy
3 tbsp mayonnaise
1 tbsp olive oil
2 cups cheese
Other cut-up vegetables like peppers, carrots, sweet potatoes etc (Optional)

Directions

1. Preheat oven to 375 degrees.
2. Place the cauliflower, black beans, and other vegetables in a cast iron skillet or large rectangular baking dish.
3. Mix the mustard and mayonnaise together in a bowl.
4. Spread on top of cauliflower mixture.
5. Drizzle olive oil and cheese over the top.
6. Mix well.
7. Bake, covered, for 50-60 minutes until cauliflower and vegetables can be pierced with a fork.
8. Broil or bake, uncovered, for 10-15 minutes to brown top.
