Chocolate Peanut Butter Chia Granola

A delicious snack… or maybe dessert?

Ingredients

2 1/2 cups steel-cut oats
1 tbsp cocoa
1/3 cup coconut oil, solidified
1/2 cup peanut butter
1/3 cup + 2 tbsp honey, divided
1 tsp vanilla extract
1/2 tsp salt
2-3 tbsp tahini (or more peanut butter)
1 tbsp chia seeds
(Optional) Raisins, Nuts, Chocolate Chips, or dried fruit

Directions

1. Preheat oven to 300°F.
2. In a large bowl, combine oats and cocoa.
3. In a small bowl, combine coconut oil, peanut butter, 1/3 cup honey, vanilla, and salt.
4. Melt coconut oil mixture in a microwave, 30 seconds depending on microwave settings, then whisk until well combined.
7. Pour coconut oil mixture over oat mixture and combine.
8. Spread and flatten granola over a parchment lined baking sheet using a spatula.
9. Bake for 25 minutes.
10. Remove from oven and dollop tahini (or more peanut butter) onto granola.
11. After the tahini (or peanut butter melts), spread with a spatula then sprinkle chia and 2 tbsp honey over granola.
12. Let sit for one hour.
13. After well cooled and hardened, break it up into clusters.
14. Combine with raisins, nuts, chocolate chips, or dried fruit, if desired.
