Kimchi Fried-Quinoa

A delightful way to present kimchi

Makes about 4 servings, serving size: 1 1/2 cups

Ingredients

2 tbsp sesame oil, divided
2 eggs, lightly beaten
1 cup green onions, chopped
2 garlic cloves, minced
3/4 cup kimchi, cooked
1/2 cup frozen green peas
1/2 cup frozen corn
1/2 red pepper, chopped
2 cups cooked quinoa, cooked
1/4 cup kimchi juice
2 tbsp soy sauce
1 cup cilantro, chopped

Directions

1. Heat 1/2 tbsp sesame oil in a skillet over medium-high heat.
2. Add eggs and cook, stirring constantly, until just barely cooked.
3. Remove from pan.
4. Heat remaining sesame oil in pan.
5. Add green onions and garlic cloves and sauté 1 minute.
6. Add kimchi, green peas, corn, red pepper, quinoa, and sauté 4 minutes.
7. Stir in kimchi juice, soy sauce, and eggs and heat through.
8. Top with cilantro and serve.
