Spicy Cauliflower and Pineapple Stir Fry

A nice warm (healthy) stir fry

Ingredients

2 tsp canola oil
2 cloves garlic, minced
1 whole medium cauliflower, coarsely chopped
2 tbsp soy sauce
1 tbsp rice wine vinegar
1 medium green pepper, diced
1 (8oz) can of pineapple tidbits, diced
2 green onions, diced and divided
2 tbsp sriracha (or more!)
Sesame seeds for garnish

Directions

1. Heat a skillet over medium-high heat.
2. Add oil, garlic, and cauliflower without stirring for 3 to 5 minutes to help char some of the florets.
3. Stir in soy sauce and rice wine vinegar and cover.
4. Cook until cauliflower is almost fork-tender.
5. Add green pepper, pineapple, half of the green onions and sriracha sauce. Stir until ingredients are covered.
6. Cook for 3 to 5 minutes or until green pepper is tender then remove from heat.
7. Divide into bowls and sprinkle with remaining green onions and sesame seeds.
