Black Bean Tortilla Soup with Sweet Potatoes and Kale

Ingredients

1 tbsp olive oil
2 medium sweet potatoes, chopped in 1/2 inch pieces
4 cups kale, roughly chopped
2 cloves garlic, minced
2 cups stock, divided
1 onion, chopped
1 red bell pepper, chopped
1 jalapeno pepper, chopped
1 can of black beans
1 can of diced tomatoes
1 1/2 tsp cumin
1 cup of cilantro, chopped
1/4 cup sour cream
Salt and pepper, to taste

Directions

1. Combine oil, sweet potatoes, kale, garlic, and 1/4 cup of stock in a saucepan. Heat on medium-high and cover.
2. When potatoes and kale are still slightly firm, add onion, peppers, black beans, tomatoes, cumin, and rest of stock.
3. Cook until ingredients are tender.
4. Remove from heat, add tortilla strips, and let cool slightly.
5. Stir in cilantro, sour cream, and serve
