Pumpkin Hummus

A great tasting pumpkin-y variation on traditional hummus.

Ingredients

1 can (15 oz) pumpkin
3-6 tbsp chopped cilantro plus extra for garnish
4 tbsp tahini
3 tbsp lemon juice
3 cloves garlic
1 tsp ground cumin
1 tsp salt
1/4 tsp black pepper
1/4 tsp ground cayenne pepper or paprika plus extra for garnish

Directions

1. Combine all ingredients in food processor.
2. Process until smooth or desired consistency
3. Sprinkle with additional cilantro and pepper (or paprika)
4. Cover and refrigerate at least 2 hours

Serve with pitas or flat bread or vegetables
