Spicy Cocoa Candied Nuts
Makes 4-6 cups
Ingredients
1 lb walnut halves (or other nuts)
1 cup sugar
6 tbsp milk (or other plant milk)
2 tsp cinnamon
1/4 tsp salt
4 tsp cocoa
1 tsp chili flakes (more or less depending on spice level)
1 tsp vanilla extract
Directions
1. Roast nuts on stovetop or roast in oven at 350F for up to 10 minutes
2. Stir together sugar, milk, cinnamon, salt, cocoa, chili flakes in a medium saucepan over medium-high heat.
3. Bring candy mixture to a boil and stir frequently until mixture reaches soft-ball stage or 236F. Remove from heat.
4. Immediately stir in vanilla.
5. Mix roasted nuts with candy mixture.
6. Spoon nuts onto wax paper and let cool.
7. Break apart. Store in an airtight container.
