Spicy Cucumber Kimchi

A quick, easy, and healthy snack

Makes 2-3 cups

Ingredients

1/4 cup rice vinegar
2 tbsp Gochujang sauce
1 tbsp soy sauce
1 1/2 tsp sugar
1 1/2 tsp sesame oil
1/2 tsp sesame seeds
1/4 tsp powdered stock
3 mini cucumbers, thinly sliced (2-3 cups, packed)

Directions

1. Stir all ingredients together.
2. Chill 1 hour and keep refrigerated for up to 1 week.
