Sweet Potato Koftas in Tikka Masala Sauce
Ingredients
2 medium sweet potatoes
1/2 cups peas
1 jalapeno, minced
2 tbsp chopped cilantro
1/2 tsp salt
1/2 tsp asafoetida (found in most Indian Grocery Stores)
2 tbsp cornstarch
1/4 tsp baking powder
1/8 tsp pepper
Salt to taste
1 jar Tikka Masala Sauce
Directions
1. Preheat oven to 400°F.
2. Clean and pierce sweet potatoes with a fork.
3. Place sweet potatoes on a paper towel and microwave for 2-5 minutes until they are soft
4. Cut potatoes into chunks and put into food processor
5. Put rest of ingredients into food processor and process until mostly smooth.
6. Form 1-inch balls and place onto lightly greased cooking sheet.
7. Cook in over for 30-45 minutes, until edges are slightly dark.
8. Prepare Tikka Masala Sauce and place Koftas into sauce. If you made the Koftas a head of time and let them cool, cook them in the sauce until they are warm.
9. Serve over rice or with Indian flat bread.
