Banh Mi Pizza
Ingredients
1 cup apple cider vinegar
1 cup water
1/2 cup white granulated sugar
1/2 tsp salt
1 cup matchstick-cut carrots
1/2 medium sized cucumber, thinly sliced
1/2 cup radishes, thinly sliced
1 jalapeƱo pepper, thinly sliced
1 tbsp soy sauce
2 tbsp sesame oil
1/4 cup peanut sauce
1 1/2 cup mozzarella cheese
1 1/2 tbsp mayonnaise
1 tsp Sriracha chili sauce
1/2 cup cilantro, chopped
Prepared whole-wheat pizza dough (see recipe)
Directions
1. Preheat oven to 500°F.
2. Combine vinegar, water, sugar, and salt in a saucepan, bring to simmer and cook until sugar and salt are dissolved. Remove from heat.
3. Place carrots, cucumber, radishes, and pepper in vinegar mixture in saucepan and let stand 10-20 minutes.
4. Roll out pizza dough, place on cooking sheet, and pierce dough well with fork.
5. Brush dough with soy sauce and sesame oil.
6. Spread peanut sauce over dough and sprinkle with cheese.
7. Bake dough for 7 minutes until cheese starts to bubble and dough looks done.
8. Spread pickled vegetables over pizza.
9. Combine mayonnaise and Sriracha and drizzle over pizza. Sprinkle pizza with cilantro.
