Chocolate Chip Peanut Butter Chickpea Cookie Dough

Enjoy a high-protein punch with this non-bake version of cookie dough

Ingredients

1 can chickpeas, drained and rinsed very well
1/4 tsp salt
1/8 tsp baking soda
2 tsp vanilla extract
1/3 cup peanut butter
1/3 cup milk or almond milk
3 tbsp brown sugar
3 tbsp oats
1/2 cup chocolate chips

Directions

1. Process all ingredients except chocolate chips in a food processor.
2. Fold in chocolate chips and serve.

Enjoy with Nilla cookies, Biscoffs or just a spoon.
