Chocolate-Dipped Peanut Butter Oatmeal Flaxseed Balls

Like peanut butter and chocolate? Try these healthy-ish chocolate dipped peanut butter balls

Ingredients

2 cups peanut butter
1/2 cup salted butter, softened
1 tsp vanilla extract
1/3 cup rice krispies
1/3 cup oatmeal
2 tbsp ground flaxseed such as Bob’s Red Mill
2 1/2 cups powdered sugar
1 to 1 1/2 lbs dark chocolate candy coating

Instructions

1. Mix peanut butter, salted butter, vanilla, Rice Krispies, oatmeal, and flaxseed together in a bowl.
2. Mix in the powdered sugar, 1/4 cup at a time until the mixture holds together well.
3. Cover and let sit in the refrigerator for 2-4 hours or overnight.
4. Cover baking sheet with wax paper
5. Shape dough into 1 inch balls.
6. Melt chocolate in a double boiler according to instructions.
7. Dip the peanut butter balls one at a time into the melted chocolate, coating well. Using two spoons to cover the dough balls seems to work well here. Place it onto the baking sheet.
8. Chill until ready to serve.
