Lemon Rice with Capers and Tofu

A nice dish to share with friends (you might have to double or triple the recipe)

Ingredients

3/4 cup rice, uncooked
1 tbsp canola oil
1 glove garlic, minced
1 medium onion, diced
1/2 medium green pepper, diced
1 bunch parsley, minced
1 (14oz) package extra-firm tofu, drained and cut into small cubes
2 tbsp capers, drained
2 tbsp butter
2 tbsp lemon juice, divided
Salt and pepper to taste

Directions

1. Cook rice according to directions.
2. Heat oil in a skillet over medium heat.
3. Add garlic, onion, and green pepper to skillet and cook without stirring until green peppers have a very slight char, about 5 minutes.
4. Stir in 1 tbsp of lemon juice to deglaze pan.
5. Add parsley and tofu to skillet and sauté for 3 minutes.
6. Add rice, butter, capers, and remaining lemon juice to skillet and stir until butter is melted.
