Pickled Garlic Scapes

Make a new delightful pickled vegetable this week with garlic scapes

Ingredients

1 bunch garlic scapes
1 tsp dried dill
1 tsp black peppercorns
1 tsp whole yellow mustard seeds
3/4 cup apple cider vinegar
3/4 cup water
1 tbsp salt
1 mason jar with lid

Directions

1. Wash and cut garlic scapes into lengths that will fit into your jar.
2. Wash mason jar and lid under hot water. Make sure that jar is not cold.
3. Place garlic scapes, dill, peppercorns, and mustard seeds in jar.
4. Bring vinegar, water, and salt to a boil in a saucepan. Then remove from heat.
5. Pour hot liquid over garlic scapes in jar, leaving a 1/2 inch headspace, and cover.
6. Let garlic scapes pickle for a week in the refrigerator.
7. Since this is not properly canned, eat within two weeks.
