Ramekin Frittatas con Salsa

Make your next breakfast a hit with these ramekin frittatas.

Ingredients

9 eggs
1/3 cup milk
1/3 cup shredded cheddar cheese
1/3 cup grated Parmesan cheese
1 tsp salt
1/4 tsp ground black pepper
1/4 cup tomato salsa
1/4 cup finely chopped fresh cilantro
Any other toppings or ingredients you like with in omelets such as ham, roasted red peppers, onions, etc.
Cooking Spray

Directions

1. Preheat oven to 375 degrees F.
2. Spray 4 to 8 small ramekins with cooking spray and set aside.
3. Set aside some of the cheese and cilantro for toppings.
3. In a mixing bowl, whisk together ingredients.
4. Divide egg mixture between ramekins.
5. Top each ramekin with cheese and cilantro.
6. Bake until the eggs are set, 12 to 15 minutes.
7. Let cool slightly and serve.

Enjoy with hashbrowns or a yogurt parfait.
