Tomato-Tahini Chickpea Soup

A delicious soup that can be made in as little as 10 minutes

Ingredients

1 tbsp olive oil
14oz can of diced tomatoes with juice
14oz can of tomato sauce
15oz can of chickpeas, drained
2 tbsp tahini
1.5 tsp ground cumin
1.5 tsp ground tumeric
Salt and pepper to taste

Directions

1. Heat olive oil in medium saucepan.
2. Combine ingredients in saucepan.
3. Use a hand-blender and pulse mixture until it reaches desired consistency.
4. Server and garnish with sour cream and a sprig of cilantro
